dans une cuisine, mais autour d\u2019une table.<br \/>La mienne est n\u00e9e entre deux terres, deux cultures qui ne parlent pas la m\u00eame langue mais partagent la m\u00eame v\u00e9rit\u00e9 : le go\u00fbt. L\u2019Italie de mes origines, et le Sud-Ouest o\u00f9 j\u2019ai grandi. Deux territoires de caract\u00e8re, deux fa\u00e7ons de vivre, mais une m\u00eame g\u00e9n\u00e9rosit\u00e9.<\/p>\n<p>Chez nous, on ne parlait pas de gastronomie. On parlait de repas, de famille, de moments qui durent. Les recettes ne s\u2019\u00e9crivaient pas, elles se transmettaient. Dans les gestes d\u2019une grand-m\u00e8re, dans une sauce qui mijote doucement, dans la farine sur les mains un dimanche matin. C\u2019\u00e9tait une cuisine de m\u00e9moire, instinctive, vivante.<\/p>\n<p>Pendant longtemps, cette passion est rest\u00e9e l\u00e0, \u00e9vidente mais silencieuse. Puis en 2013, en regardant MasterChef, quelque chose s\u2019est r\u00e9veill\u00e9. Une certitude : ce n\u2019\u00e9tait plus simplement une passion, c\u2019\u00e9tait un chemin.<\/p>\n<p>Avec Marina, ma femme, elle aussi profond\u00e9ment li\u00e9e \u00e0 cette culture italienne du go\u00fbt et du partage, nous avons d\u00e9cid\u00e9 de nous lancer pleinement. De transformer cette \u00e9vidence en projet de vie. Pronto al Gusto est n\u00e9 sur la route, dans un foodtruck, comme un laboratoire de libert\u00e9, une cuisine sans filtre, au plus pr\u00e8s des gens.<\/p>\n<p>Tr\u00e8s vite, l\u2019histoire a d\u00e9pass\u00e9 ce que nous avions imagin\u00e9. Un an plus tard, nous nous retrouvions en Floride pour les World Food Championships. Un d\u00e9fi immense, une sc\u00e8ne internationale. Et au bout de cette aventure, une reconnaissance forte : vice-champion du monde. Un moment marquant, accompagn\u00e9 par Michel Trama, chef \u00e9toil\u00e9, mentor et ami, dont l\u2019exigence et la vision ont profond\u00e9ment influenc\u00e9 notre parcours.<\/p>\n<p>Mais au fond, l\u2019essentiel n\u2019\u00e9tait pas l\u00e0. L\u2019essentiel, c\u2019\u00e9tait de revenir. Revenir ici, sur cette terre du Lot-et-Garonne, pour ancrer d\u00e9finitivement cette histoire et lui donner un lieu. Une maison.<\/p>\n<p>C\u2019est ainsi qu\u2019est n\u00e9 le restaurant Pronto al Gusto.<\/p>\n<p>Ici, il ne s\u2019agit pas de reproduire une Italie de carte postale, ni de figer une tradition. Il s\u2019agit de faire vivre une rencontre sinc\u00e8re entre deux terroirs. Les tomates gorg\u00e9es de soleil, le basilic frais, les p\u00e2tes encore chaudes rencontrent les produits du Sud-Ouest, riches, authentiques, profond\u00e9ment ancr\u00e9s dans leur territoire. C\u2019est une cuisine de lien, une cuisine de v\u00e9rit\u00e9.<\/p>\n<p>Chaque plat raconte quelque chose. Pas avec des mots, mais avec des saveurs. Des recettes transmises sans \u00eatre \u00e9crites, des \u00e9quilibres qui se ressentent plus qu\u2019ils ne s\u2019expliquent.<\/p>\n<p>Pronto, en italien, signifie \u201cpr\u00eat\u201d. Pr\u00eat \u00e0 d\u00e9guster, pr\u00eat \u00e0 savourer, pr\u00eat \u00e0 ressentir. Et ici, tout commence d\u00e8s que l\u2019on pousse la porte. Les ar\u00f4mes parlent avant les mots : la tomate qui mijote, le basilic qui s\u2019\u00e9l\u00e8ve, la chaleur des plats qui arrive \u00e0 table.<\/p>\n<p>La cuisine que nous proposons est simple dans son intention, mais exigeante dans son ex\u00e9cution : juste, g\u00e9n\u00e9reuse, vivante.<\/p>\n<p>Chez Pronto al Gusto, on ne vient pas seulement manger. On vient chercher un moment. Un instant suspendu entre deux cultures, entre souvenir et d\u00e9couverte.
